Sweet N' Spicy Carrot Fries

Hi all!

I hope everyone had a great new year and is well into the swing of things for 2013. I am excited because FINALLY we have a walker! My son was a very late walker, I was getting worried I would have to carry him down the aisle :). Anyway so I saw at Price Chopper that a 5 LB bag of carrots was $2, so I couldn't pass that up, and then I had to figure out what to do with all those carrots. Also, my husband and I both just got glasses, so need to turn my son into a beta carotene machine so his eyes stay healthy.  My son is a french fry eating machine, if I let him he would eat fries all day long, just like his grandmother. So I decided to try making carrot fries. Same concept of oven fries and oven sweet potato fires but carrots.

Sweet N' Spicy Carrot Fries

Preheat your oven to 375
6 carrots, washed, peeled, and cut into french fry like stripes



1 Tbsp olive oil
1 tsp cardamom
2 tsp cinnamon
1 1/2  tsp ginger
2 tsp sugar

Cut the carrots and place them on a nonstick baking sheet.

Pour the olive oil on first, and then add the spices. Mix well with your hands so each carrot is coated with the spices.


Arrange the carrots so none are touching each other (if they are touching it will cause them to steam, and not get crunch, we want the crunch).

Bake them in the oven for 35-40 minutes, but keep an eye, they will burn quickly and babies don't like burned food.

Once they are out of the oven transfer to a bowl and sprinkle with salt. The salt will bring out all the flavors we just roasted into these carrots. They honest to god came out tasting just like sweet potato fries, this is also a great healthy alternative as a side dish for your whole family! I know I snuck in a few :).

To make these for a younger baby place into a blender and thin with formula or breast milk and/or a little orange juice. Puree to desired consistency. Please remember that spices are considered a "new food" so remember to wait 3-4 days before introducing a new food.

Last night for a treat I made my son his long time favorite roasted bananas with berries (http://realbabieseatrealfood.blogspot.com/2012/05/roasted-berries-spiced-sweet-potatoes.html), however I added cottage cheese and vanilla extract to boost the protein in his smoothie. It was a huge success, please feel free to try it for your little one!!
